Guinness Infused Crockpot Corned Beef and Cabbage

I love St. Patricks day! Every year, I get to make this delicious corned beef and cabbage dinner. This recipe, is also great to use for dinners year round!

Make the corned beef and cabbage Keto Friendly!

You can make this recipe more on the keto side by removing the potatoes and beer! I am also using beef bone broth instead of beef stock! This is how I am altering the recipe this year! My husband and I have been pretty good about sticking to our low carb lifestyle over the past 6 months!

I am a huge sweet tooth person as well. You can’t have St. Patricks day without some delicious dessert! This year, I am sticking to my low carb diet and made these awesome Keto Clover ‘Sugar’ Cookies! They are going to pair so well with this crockpot dinner!

Crockpot for the win!

I always get so excited, when I can use my crockpot to cook my dinners with! It makes cooking dinners so easy!

All I have to do for this recipe is grab my knife and cutting board and get to chopping those vegetables! Add them to the pot, add the meat on top! Then just toss in some beef bone broth and Gunniess!

I do recommend waiting till about an hour before serving to add the cabbage. It doesn’t take long to cook, and it can get really soggy if you leave it in the whole time!

Set your crock pot to low or high setting, depending on how you timed it! Then waa laa!! Just let the magic happen! Your Gunniess infused corned beef and cabbage will be done in no time! Enjoy the festivities of your day and not have to worry about when to start dinner!

Guinness Infused Crock Pot Corn Beef and Cabbage

Ingredients

  • 2 lbs Corn Beef
  • 2-3 cups Raw Carrots
  • 1 bundle celery stalk
  • 1 head Cabbage
  • 1/2 chopped white onion
  • 2-3 medium sized red potatoes
  • 6 oz Gunniess
  • 32 oz Beef Stock

Instructions

  • Turn on crock pot to cook on low for 6 to 8 hours, or on high for 4 hours.
  • Cut up vegetables, potatoes, and onion. Put into crock pot.
  • Put corn beef on top of cut up onion, potatoes, carrots, and celery.
  • Pour beef stock and gunnies over top. Cover and let cook!
  • About 1 hour before serving add in cabbage! Then enjoy!
